Back to School with Blossom Honey

Looking for healthy inspiration for kids’ lunch boxes and after-school snacks? Here’s some easy, must-try recipes with raw honey, to help boost all the family’s immunity and promote slow-release energy and better mental focus.

Honey Cereal Bars 

What you need:

  • 2 cups rolled oats
  • ¼ cup Emirati Wildflowers honey (or Whipped Chocolate honey)
  • ¼ cup dark brown sugar
  • ¼ cup unsalted butter
  • 1 tsp vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons ground flaxseed

Method:

  • Add the brown sugar, honey and butter into a small saucepan on the stove
  • Once melted and mixed well, add in the vanilla extract and seasonings
  • Combine the mixture with the oats in the pan
  • Place the mixture into a square pan and press down so it’s firmly packed together
  • Let cool in the fridge then cut into bars and enjoy!

You can also add chocolate chips or dried fruits.

Baked Apple Crisps 

What you need:

  • 4 Granny Smith apples
  • 2 tbsp Yemeni Wildflowers Honey
  • ½ tsp Ground Cinnamon

Method:

  • Preheat oven to 200°c/400°f
  • Core and slice each apple into 8 pieces
  • Place as many as you can in a lined baking tray without overlapping, drizzle with honey and sprinkle with cinnamon
  • Bake for 30-40 minutes, flipping each slice halfway through
  • Enjoy!

Try adding raisins for extra chewy goodness!

Banana & Honey Bread 

 What you need:

  • ⅓ cupmelted coconut oil or extra-virgin olive oil
  • ½ cup Emirati Sidr honey
  • 2 eggs
  • 1 cup banana, mashed
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp cinnamon, plus more to swirl on top
  • 1 ¾ cups whole wheat pastry flour or regular whole wheat flour
  • 1 tsp baking soda mixed with ¼ cup hot water

Method:

  • Preheat oven to 165°c/325°f and grease a 9 x 5” loaf pan
  • In a large bowl, beat oil and honey together
  • Add eggs and beat well
  • Stir in the bananas and vanilla extract, then the salt and cinnamon
  • Lastly, stir in the flour, just until combined
  • Mix the baking soda with water and add it into the bread mixture until it is evenly distributed
  • Spread the mixture into the greased loaf pan and sprinkle with cinnamon
  • Bake for 55 to 65 minutes. Be sure to check that the bread is done baking by inserting a toothpick in the top. It should come out clean
  • Let the bread cool for 5 minutes, then transfer it to a wire rack to cool for 30 minutes before slicing. 

Honey & Ginger Glazed Salmon 

What you need:

  • Rice
  • Frozen peas
  • Spring onion
  • Garlic
  • Ginger
  • Soy sauce
  • Emirati Wildflowers Honey
  • Rice wine vinegar (if you don’t have this, you can make without – it will just be a thicker consistency)

Method:

  • Boil some rice
  • Add some frozen peas and spring onion
  • Mix crushed garlic, ginger, soy sauce, a squeeze of honey and a tablespoon of rice wine vinegar in a bowl. Marinade the salmon in the mix
  • Fry the fillets, then pour over the marinade sauce and simmer with lid on
  • Dish up the fillets and rice, and enjoy!

Strawberry & Banana Smoothie

What you need:

  • 1 cup strawberries (frozen is fine but fresh taste so much better!)
  • ½ banana. mashed
  • 4 tsp Kyrgyzstani White Honey
  • 4 tbsp low-fat milk (for a thicker consistency, add low-fat Greek yogurt)

Method:

  • Put all the ingredients in a blender and mix
  • Ready to serve!
