This luxury honey is produced by small stingless mountain bees who build their honeycomb around tree branches rather than in hives. The honey has a distinctive mix of sweet and sour taste from the plant resins, which the bees use to build their hives. These small bees produce less honey than the usual bee honey (although still more than they need) and it is harder to harvest, so has a higher price. Mountain bee honey is highly nutritious as the smaller bees can collect nectar from the deepest space. With strong antimicrobial benefits it can be used to aid healing of infections.
