As summer comes to an end and most of the schools in Dubai welcome students back next week, we look at how you can use honey to create delicious and nutritious snacks that will make your child’s lunchbox the envy of their class!

Honey Cereal Bars

Ingredients:

  • 4 cups Cheerios cereal
  • ½ cup Emirati Wildflowers honey
  • ¼ cup coconut oil
  • 1 tbsp lemon juice
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • 1 cup dried fruit

Method:

  • Add the coconut oil, cinnamon and salt to a small saucepan
  • Bring to the boil, add lemon juice and simmer
  • Take off the heat and stir in the raw honey
  • Place the Cheerios and your dried fruits in a large bowl
  • Pour the honey mixture over the cereal
  • Place the mixture into a parchment lined baking dish
  • Chill in the freezer until solid

Mini Fruit Pancakes

Ingredients:

  • ½ cup plain Greek yogurt
  • ½ cup milk
  • 2 eggs
  • 2 tbsp unsalted butter (melted and cooled; plus more for cooking)
  • 1 tsp vanilla essence
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 medium bananas (very ripe, or 2 cups sliced strawberries)
  • Whipped Chocolate honey

Method:

  • Add the yogurt, milk, eggs, butter, and vanilla to a medium bowl. Whisk to combine into a smooth mixture
  • Add the flour, sugar, baking powder, and salt. Whisk gently to combine
  • Slice the banana or strawberries into the batter and stir gently to coat
  • Heat a large nonstick skillet over medium heat. Melt a little butter and swirl to coat the pan
  • Use a fork to lift one batter-coated banana slice at a time and place onto the pan. Repeat to add more to the pan.  Cook for 3-4 minutes, or until you see bubbles start to form on the surface and the edges are set
  • Flip over with a spatula and cook for an additional 3 minutes. (The banana softens as the pancake batter sets and cooks through.)
  • Serve with Whipped Chocolate Honey

Cinnamon Apple Slices

Ingredients:

  • 2 green apples
  • Cinnamon-Infused Honey

Method:

  • Preheat oven to 200°c
  • Slice and core apples and line up on a sheet of parchment paper
  • Drizzle generously with our Cinnamon-Infused Honey
  • Bake for 15-20 minutes before flipping to bake on the reverse
  • You should be able to stick a fork through them when ready. We personally love to drizzle with more honey once cooled!
